A Southern Summer Delight

 That moment when the tomato juice and Dukes mayo mix and turn pink...Oh my, my! 
Heaven on sliced bread!

 A summer classic and southern delight.....the tomato sandwich is hands down one of the best things about a southern summer. 

This time of year, tomatoes are in abundance all over southern gardens. The growing season starts earlier and lasts longer and with such an abundance, meals with them are, too. Earlier this spring, when I put tomato plants in the ground, my mouth began to water. I remembered last summer and years before....the sweetness, the juiciness of the tomato sandwich. It's the one thing that, when eaten, says summer is here! 
Can I get an Amen? 

I had a tomato sandwich yesterday and another one, today.


A southern staple.

Now, it dawned on me that there could be someone who has never fathomed the idea of a tomato sandwich, much less sank their teeth into one. Well, honey child, if that's you, I'm here today to enlighten you on this southern delicacy.  It's ingredients are simple. You won't even need to copy the recipe down. 
Here it is...

Tomato Sandwich 
1 garden fresh, sun-ripened tomato, sliced
2 slices white bread
Dukes mayonnaise (brands matter)
Salt & Pepper, to taste

Spread Dukes mayo on your bread. Lay on sliced tomatoes and salt & pepper to taste.

That's it! Heaven on sliced bread!
